  1. Lemon Rice (Elumichai Sadham) 🍋


Lemon Rice

Ingredients:

  • 1 cup cooked and preferably cool rice
  • 1 lemons juice
  • 1 tablespoon oil.
  • 1 tsp mustard seeds
  • a few curry leaves (like 5 to 6 pieces) (optional)
  • Season with salt

How to make it:

1. Heat oil in a pan and sauté mustard seeds. Let them rant.

2. Reduce heat, include cooked rice, lemon juice and salt.

3. Mix well and serve with papad/pickle.

It’s airplane-friendly, too: light, zippy, and ready in two minutes or less — glorious for lunchboxes or speedy suppers.


  2. Tamarind Upma (Oshadi Puli Upma) 😍

Ingredients:

  • 1 cup rava
  • 2 tbp tamarind pulp. remove the seeds.
  • 1 tb sp oil
  • 1 tsp mustard seeds
  • Salt according to taste.

How to do it:

1. Dry roast the rava to a nice aroma.

2.  Heat the oil, add mustard seeds, then put in the tamarind pulp that is mixed with water and salt.

3. Add prepared Rava which was roasted until soft and fluffy.

4. Mix well and serve with pickle

Why I like it:

It’s a comforting take on normal upma — the tanginess of tamarind that screams South Indian home kitchen.


   3. Coconut Egg Curry 🥚🍛
Coconut Egg Curry

Ingredients:

  • 4 hard-boiled eggs
  • 1 cup coconut (grated, fresh or frozen)
  • 1 onion, thinly sliced
  • 1 tsp red chili powder
  • Add salt to taste

How to prepare it:


1. Grate the coconut & make a smooth paste out of it by adding little water.

2. In a saucepan warm oil, cook onions until brown.

3. Add chili powder, coconut paste, and salt and simmer till the gravy thicken.

4. Add boiled eggs and cook for a few minutes.


What I love:

Rich, creamy and mildly Spicy — it goes very well with dosa, idiyappam or a plain rice.


Pro kitchen Tips on 5 Ingredient South Indian Cooking

  • Add curry leaves, should you have them they immediately lighten up the flavour (although this is optional).
  • Fresh coconut is okay, but you may use frozen instead.
  • Have tamarind pulp in the fridge- usually saves time on lots of South Indian recipes.
  • When using a small kitchen environment such as those in a hostel, cook in small numbers.
